Easy Pumpkin Muffins
These are only 1 point on Weight Watchers!
Preheat Oven to 350 degrees.
Use a mini muffin tin for 24 muffins that are only 1 weight watchers' point each!
In a medium mixing bowl, mix one cake mix and one 15 oz. can of pumpkin. For fewer calories, choose a sugar free cake mix. I highly recommend a spice cake mix! If you are willing to add a few more calories, add 1/2 cup of chocolate chips (white or semi-sweet). That is all! stir gently until thoroughly mixed and spoon into your muffin tin. The picture shows paper liners, but if it is a non-stick pan, you can even skip the light application of cooking spray! Bake for 25 - 30 minutes until muffins are light and golden brown. Chocolate or fudge cake mixes may take the whole 30 minutes, but are well worth the wait!
